1/4 cup Arugula
1/2 avocado(s) Avocado (sliced)
1/2 cup Basil, fresh
1/2 tsp Extra virgin olive oil
1/2 tsp minced Ginger root (for sauce)
114 gm Japanese noodles, soba, dry (or rice noodles)
1/2 cup Mint, fresh
1/4 cup Peanut butter, natural (for sauce)
4 piece Rice paper
1 1/2 tsp Rice vinegar (for sauce)
1 1/2 tbsp Sesame oil (for sauce)
1 cup Shiitake mushrooms, raw
1 tsp Soy sauce (for sauce)
1 tsp Soy sauce
1/2 tsp Sriracha (for sauce)
1 tsp Water (for sauce, to thin if necessary)


In a small bowl, mix together the ingredients for your peanut sauce.

Cook noodles until al dente. Cook the mushrooms by heating a skillet to medium. Add a little bit of oil, then the mushrooms. Cook until browned and soft, about 5 minutes. Remove from heat, toss with soy sauce, and let them cool to room temp.

One at a time, dip rice papers into warm water for 5 seconds. Remove and place on a clean towel.

Place the noodles, mushrooms, avocado, herbs and greens in the center of the rice paper. Wrap and tuck the sides, then the bottom flap, and then carefully roll until the wrapper is tightly closed.

Serve with peanut sauce for dipping.
