3 medium pepper(s) Green bell pepper (cut in2-inch squares)
6 tomato Roma tomatoes (cut into large chunks)
1/2 cup Black olives (pitted)
2 tbsp Extra virgin olive oil
1/2 whole lemon(s) Lemon juice
1 pinch Salt and pepper (to taste - sea salt)
2 tbsp Parsley, fresh (minced)

Instructions


1. In a small medium sized serving bowl, combine the bell pepper, tomatoes and olives.

2. In a small bowl, stir together the oil and lemon juice.

3. Pour this dressing over the vegetables.

4. Season with salt and pepper to taste and sprinkle with parsley.
