With less than 1 net carb per serving, this rich, delicious keto gravy needs to be on your holiday menu!
Ingredients
1/4 cup
Butter, grass fed, unsalted
1 cup
Turkey, whole bird
(or other meat) pan drippings)
2 cup
Turkey stock
(chicken; beef bone broth (either homemade or storebought))
2 tsp
Worcestershire sauce
(gluten free)
1/2 tsp
Garlic powder
1/2 tsp
Onion powder
1 dash
Salt
(Kosher)
1 dash
Black pepper
(Fresh cracked)
1/2 tsp
Xanthan gum
1 tsp
Extra virgin olive oil
Instructions
In a medium skillet over medium heat, melt butter. Whisk in the pan drippings and broth until smooth. Bring to a boil, then add Worcestershire, garlic powder, onion powder, and season with a good amount of salt and pepper, tasting as you go. Reduce heat and let simmer 10 minutes.
In a small bowl, combine the xanthan gum and olive oil. Whisk into the drippings mixture.
Let simmer another 5 to 10 minutes until starting to thicken, whisking occasionally. Gravy will thicken more as it cools but you can add an additional 1/8 teaspoon xanthan gum if needed.
If gravy is too thick upon cooling reheat a bit and thin with more broth as necessary.
