Ingredients


2 cup Organic Quinoa
6 cup Baby spinach
4 tbsp Basil pesto
1/2 tsp Salt
1/2 cup Parmesan cheese, grated (plus more for topping)

Instructions


1.  Cook quinoa according to package directions.  

2. Remove quinoa from heat and add the pesto, spinach and salt.

3.  Stir to combine all ingredients until spinach is wilted.

4.  Serve sprinkled with additional Parmesan cheese.
