|1/2 medium head||Cauliflower|
|3 tbsp||Basil pesto|
|1/4 cup||Greek yogurt, plain, fat-free|
1. Cut cauliflower in half and then into smaller pieces and add to pot.
2. Add water to just cover cauliflower and bring to a boil, boil until fork tender (about 10 mins depending on size of florets you cut)
3. Drain water and mash into rough consistence.
4. Add yogurt and pesto, mix thoroughly and serve along side your fav protein!
is a great replacement for grains and is very high in fiber and B vitamins!
