Pesto Grilled Cheese on Sourdough

Grilled cheese sandwich with pesto, tomatoes, Gouda and Parmesan cheeses.

Ingredients


8 medium slice Sourdough bread
2 tbsp Butter, unsalted (softened)
1/4 cup Basil pesto
2 medium Beefsteak tomato (sliced)
1/4 cup Parmesan cheese, shredded
4 slice Gouda cheese

Instructions


  1. Butter one side of each slice of bread.
  2. Place 4 buttered slices on a cutting board or baking sheet with the buttered side down. 
  3. Spread pesto onto each of the 4 slices. 
  4. Add tomatoes, Parmesan, and Gouda cheeses. 
  5. Place remaining bread on top with buttered side up.
  6. Preheat a griddle or a cast-iron skillet on medium heat. 
  7. Place 1-2 sandwiches on a griddle. Cook for 2-3 minutes until the bottom bread is nicely browned. 
  8. Flip sandwiches and continue cooking for 2-3 more minutes until the other side is brown and cheese is melted throughout.  
  9. Repeat with remaining sandwiches.
