This easy Pesto Salmon is covered in basil pesto and then oven-roasted. It’s delicious, ready in minutes, and is perfect for weeknight dinners.
2 fillet (384g)
Atlantic salmon, wild
Preheat the oven to 400°F.
Check salmon for bones, rinse under cold water then pat dry. Season both sides of the salmon with salt and pepper.
Place each salmon fillet on a square of parchment paper and spread pesto on top. Fold the parchment paper around the salmon creating a pouch. Seal the top by folding it over and twist the ends to create a seal.
Bake for 20 minutes, or until the salmon is cooked through and flaky.
