1/2 cup Apple cider
1 leaf Bay leaf
2 beet(s) Beets, raw
1/2 cup Rice vinegar
1/2 tsp Salt, pickling
1/2 cup Water (use as needed)

Instructions


Slice beets into 1/4 inch slices.

In a saucepan, cover beets with water. Bring to boil, lower heat and simmer for 15 minutes. Drain. Place beets in pint size glass jar.

Bring rice vinegar, salt, apple cider and bay leaf to a boil. Lower heat and immer for 2 minutes.

Pour vinegar mixture over beets and cover. Refrigerate over night.

Drain before serving.
