1 cup Millet, dry
3 tbsp Extra virgin olive oil (divided)
3 tbsp Apple cider vinegar
1 pinch Sea salt (to taste)
1 dash Black pepper (to taste)
1 large Heirloom tomatoes (diced)
1/2 small Red onion (diced)
1/4 cup Basil, fresh (chopped)
6 leaf Basil, fresh (for garnish)
1/4 cup Pine nuts, dried (toasted)


Cook the millet. Let cool slightly and toss with 1 tablespoon of the oil.

In a small bowl, whisk together the vinegar, remaining 2 tablespoons oil, and salt and pepper to taste.

In a medium bowl, combine the cooked millet, tomato, cucumber, onion, and basil. Drizzle in the oil and vinegar mixture and add the pine nuts.

Toss to combine. Adjust the salt and pepper if necessary.

Serve immediately or chilled.
