These pimento cheese boats are the perfect one-handed snack: simple, easy, & tasty. Yes, please!
Ingredients

Cheddar cheese
(block; do not use pre-shredded)
1/2 cup
Cottage cheese (2% M.F.)
1/4 onion(s)
Sweet onion
(grated; about 1 tbsp plus the juices that come with it)

Roasted red peppers, canned
(or pimento peppers; drained and diced)
1 dash
Cayenne pepper

Celery
(1 bunch; washed and cut into 3" long sticks )
Instructions
Grate the cheese into a medium bowl. Set aside.
Put the cottage cheese in a blender or mini food processor. Blend until smooth. Add to the cheese.
Stir in the grated onion & juices and red peppers. Stir well to combine. Season with cayenne pepper. Cover and refrigerate for at least 2 hours for flavors to combine.
Slice the celery into about 4 inch sticks. Spread about 1-2 tablespoons of pimento cheese on each celery sticks. Enjoy!
