1 cup diced Pineapple
1/2 cup Cherry Tomatoes (diced in quarters)
1/4 cup chopped Green bell pepper (deseeded, and diced)
1 medium pepper(s) Jalapeno pepper (deseeded and diced)
1 tbsp Lime juice (fresh)
1 tsp Lime peel (zest)
1 tbsp Olive Oil, Extra Virgin
1 tbsp Cilantro (coriander) (chopped; or parsley)
1 dash Salt and pepper (to taste)


  1. Mix ingredients together, add fresh herbs right before serving.
  2. Can be made up to a day in advance stored in refrigerator.
  3. Top 1 tablespoon salsa on top of grilled fresh corn tortilla topped with 5 grilled shrimp or beef strips and 1/4 cup of grated cheddar cheese.
