Pink Oatmeal with Roasted Bananas

2 cup Rolled oats- Gluten Free (doesn't need to be gluten-free of course!)
4 cup Water
1/4 cup Tigernut flour
3 beet(s) Beets, boiled, drained
1/2 tsp Camu camu berry powder
2 medium Banana (s)
2 tbsp Cacao nibs, raw
2 tbsp hulled Hemp seeds, shelled (optional - for topping)
2 tbsp Chia seeds (optional - for topping)


Roast bananas at 400 degrees celsius for 15 minutes (in peels).

Puree beets in food processor.

Meanwhile, bring water to boil and add oats - cook for about 10 minutes or until desired texture is reached.

Remove oats from heat and stir in beet puree and camu camu powder.

Top with bananas and any other desired toppings (such as those listed in the ingredients).
