These pancakes are made with nutrient dense green plantains so they won't spike your blood sugar like regular flour pancakes!


2 plantain(s) Plantain (green)
4 large egg Egg
3 tbsp Coconut oil
2 tsp Vanilla extract, pure
1/2 tsp Baking soda
1/8 tsp Salt
1 tbsp Coconut oil (for frying)


1. Peel plantains and add them to a high speed blender with eggs, coconut oil, vanilla extract, baking soda and salt, and blend until smooth.


2. Heat griddle or cast iron pan to medium-high heat and add additional coconut oil to melt. Using a 1/4 cup measure, ladle out batter to make pancakes.


3. Cook 3-5 minutes on first side. When pancakes have a few bubbles and appear dry on top, flip and cook an additional minute or two.


4. Repeat until you finish the batter. Garnish with your favourite fruits and nuts.
