1 tbsp Extra virgin olive oil
1 medium White onion (sliced)
2 clove(s) Garlic (minced)
454 gm Pork chop, loin centre cut, bone-in, lean (diced into cubes)
1 tsp, ground Thyme, dried
1/2 tsp Kosher salt
1 dash Black pepper
4 medium Carrots (diced)
1/4 squash Butternut squash (diced)
1 bunch Kale (chopped)
1 can (15oz) Chickpeas, canned, drained (rinsed and drained)
5 cup Chicken broth (stock), low sodium
1 medium Lemon (cut into wedges)
2 tbsp Parsley, fresh (chopped)
4 medium Apple


Heat a large pot over medium heat and add the olive oil, then onions and garlic and cook for 1 minute.

Add the pork, thyme, salt and pepper.

Add the carrots, squash, and kale. Cook for 2 minutes then add beans and broth.

Bring to simmer for about 10-15 minutes, until squash and carrots are tender.

Garnish with lemon and parsley. Serve with a side of sliced apples.
