Pork Burgers & Chipotle Mayo

Ingredients


341 gm Pork, ground, lean
100 gm Green onion (thinly sliced)
1/2 bunch Cilantro (coriander) (fresh)
1 tbsp Ghee
2 tbsp Mayonnaise, with avocado oil (Primal Kitchen Chipotle)
4 large leaf (s) Iceberg lettuce
1 tsp Salt and pepper

Instructions


  1. In a large bowl, mix to combine the ground pork with the scallions and cilantro, and season with pink salt and pepper. Form the pork mixture into 2 patties. Create an imprint with your thumb in the middle of each burger so the pork will heat evenly.
  2. In a large skillet over medium-high heat, heat the ghee. When the ghee has melted and is very hot, add the burger patties and cook for 4 minutes on each side.
  3. Meanwhile, separate the lettuce leaves, rinse, pat dry and divide among 2 plates
  4. Once cooked transfer the burgers on top of the lettuce leaves.
  5. Top the burgers with the Chipotle Mayo, wrap & enjoy!
