2 medium Apple (cored, cut into thick wedges)
1/4 tsp Black pepper
1/4 cup Maple syrup
1 tbsp Olive Oil, Extra Virgin
800 gm Pork, tenderloin, lean (cut in cutlets)
1/4 tsp Salt
4 small shallot(s) Shallots (peeled, quatered)
3 tsp Thyme, fresh (chopped)

Instructions


Preheat the oven to 400F/200C.

Season cutlets with salt and pepper.

Heat oil in a large skillet over medium-high heat. Brown pork turning once for one side for about 1 minute or until golden. Transfer to a baking sheet and roast in oven for 7-9 minutes or until just a hint of pink remains inside. Remove from oven, tent with foil and let rest for 5 minutes.

Meanwhile, add apples, shallot and thyme to the same skillet. Cook for 7 minutes.

Combine 1/2 cup boiling water, maple syrup and juices from the baking sheet in a jug. Stir into apple mixture and cook for 4 minutes.
