| 500 gm | Pork, sirloin (boneless), lean (cut into thin strips) |

1. Heat a dry frying pan on medium heat, add sesame seeds and stir until golden-brown. Set sesame seeds aside.
2. Heat olive oil in a skillet on medium-high heat. Add the pork strips in three separate batches - stir frying each batch for approximately 2 minutes, set one batch aside before adding the next batch to the skillet. Remove the last batch of pork strips from the skillet and add garlic and pepper and stir-fry for 2 minutes.
3. Add all the pork back to the skillet, pour in sherry and soy sauce, toss with green onion and cook for 1 minute.
