In a large shallow sauce-pan, heat cooking oil on medium heat until hot, toss in the pork tenderloin and sauté until browned.
Add onions and sauté until onions are soft that’s about another 3 – 4 minutes.
Add tomato paste and 1 cup water, oregano, smoked paprika, salt and pepper and stir until everything is combined, add olives, cherry tomatoes and simmer on low heat for 5 – 8 minutes, uncovered.
Serve with a side salad of your choice.
