908 gm Pork, tenderloin (thinly sliced)
2 tbsp Avocado oil (or ghee or coconut oil)
1 medium White onion (sliced)
30 tomato Cherry Tomatoes (about 1 pint)
1 cup whole Green olives (or preferred olives)
1 tbsp Oregano, ground
2 tbsp Paprika, smoked
2 tbsp Tomato paste, canned

Instructions


In a large shallow sauce-pan, heat cooking oil on medium heat until hot, toss in the pork tenderloin and sauté until browned.

Add onions and sauté until onions are soft that’s about another 3 – 4 minutes.

Add tomato paste and 1 cup water, oregano, smoked paprika, salt and pepper and stir until everything is combined, add olives, cherry tomatoes and simmer on low heat for 5 – 8 minutes, uncovered.

Serve with a side salad of your choice.
