1 leaf Bay leaf
1 dash Black pepper
2 tbsp Olive Oil, Extra Virgin
500 gm Pork, sirloin (boneless) (cut into 1 inch cubes)
1/2 cup pitted Prunes
2 tbsp Wine, table, red
1 dash Salt
2 tbsp Sour cream, light
1 1/2 medium Yellow onion (chopped)


Heat oil in a large skillet over medium-high. Put pork in two batches and brown from all sides. Remove to a plate.

In the same skillet fry onion stirring for 4 minutes. Return pork, add 1 cup boiling water, prunes, sour cream, wine, bay leaf, salt and pepper.

Reduce heat to low and cook for 1 hour or until pork is soft.

*Pork can be substituted with veal tenderloin.
