Ingredients


4 large mushroom(s) Portobello mushroom
2 tbsp Extra virgin olive oil
1/2 cup Marinara pasta sauce
114 gm Mozzarella cheese, partially skimmed (shredded)
1/4 cup Broccoli florets
1/4 cup Cherry Tomatoes (sliced)
1/4 cup Green/yellow string beans, raw (chopped)
1/4 cup grated Carrots

Instructions


Scrape ribs from the underside of the portabella mushrooms.

Brush with olive oil and roast in 400 degree oven fro 8-10 minutes.

Blot dry with paper towel. Spread each mushrooms underside with marinara sauce. Sprinkle with cheese, and add choice of veggies. Return to the oven and bake one more time until cheese is melted.
