1. Preheat oven to 350.
2. In a frying pan over med high heat, saute onions, garlic and mushrooms for about 5 mins. Then add kale and cook until wilted.
3. Lay out 4 small tortillas on roasting pan, equally divide fillings among them and fold each in half.
4. Bake for about 8 minutes, serve hot - optional salsa and plain Greek yogurt/sour cream.
