681 gm Beef, ground, lean
1 tsp Cayenne pepper (tsp)
1 tsp Himalayan sea salt
2 clove(s) Garlic (minced)
114 gm Green onion (chopped)
1 large Egg (beaten)
8 large mushroom(s) Portobello mushroom (washed)
114 gm Avocado (flesh)
1 whole lime(s) Lime juice (fresh) (juiced)
1 clove(s) Garlic (minced)
1 tbsp Cilantro (coriander) (chopped)
2 tbsp Extra virgin olive oil
57 gm Arugula

Instructions


  1. Let ground beef sit at room temperature for 20 mins
  2. Mix the ground beef with salt, cayenne pepper, garlic and scallions
  3. Mix in the beaten egg to bind the mixture thoroughly and then separate into 4 patties 
  4. Place on an oven tray lined in baking paper and bake at 180 °C (350 °F) in the oven for 20 minutes
  5. Lightly grease the mushrooms, and add them to the oven in the last 7 minutes of the burgers cooking
  6. Whilst the burgers are cooking... Combine the ingredients for the guacamole in a bowl; avocado, lime juice, garlic, fresh cilantro, olive oil and mix well, smashing the avocado.
  7. Bring the burgers together, using the portobello mushrooms as the bun, topping each patty with guacamole and arugula leaves
