2 tbsp Extra virgin olive oil
1 medium White onion
1 bulb Garlic (peeled and diced)
3 tsp Cumin
3 tsp Sea Salt
1 tsp Black pepper
1/2 can (28oz) Hominy, canned
227 gm Salsa, ready-to-serve (8-16 oz)
4 cup Chicken broth (stock)
2 cup shredded Chicken breast, boneless, skinless, grilled
1 can(s) (28oz) Diced tomatoes, canned
1 bunch Cilantro (coriander) (divided)
8 tbsp shredded Cheddar cheese (1 tbsp. per serving)
8 tbsp Sour cream, light (1 tbsp. per serving)


Sauté onion and garlic together in oil in a large pot along with cumin and spices until soft. Drain hominy, add 1/2 the can to the pot (the rest put into a zip lock bag and freeze).

Add diced tomatoes, chicken broth and salsa to the soup. Simmer for a couple of hours to get the best flavor, but can be served as soon as it is warmed through.

Just before serving, chop up the cilantro and add most of the bunch to the soup. Top with cheese, sour cream, avocado, and more cilantro.
