2 medium Carrots (2-3 carrots, peeled, grated)
2 beet(s) Beets, raw (2-3 beets, peeled, grated)
1 small Apple (grated)
2 tbsp Pumpkin seeds (pepitas) (toasted)
1/4 cup Cilantro (coriander) (about a handful, chopped)

Instructions


Grate vegetables and place in a bowl. Toss with dressing.

Sprinkle with pumpkin seeds and fresh cilantro.

Make 1 batch of Orange Horseradish Dressing or another favourite dressing.
