        | 681 gm | Chicken breast, boneless, skinless (or turkey, fish, eggs- use your favourite protein) | 
| 1 head | Broccoli, raw (chopped) | 
| 1 medium head | Cauliflower (chopped) | 
| 1/2 medium | Red onion | 
| 1 clove(s) | Garlic | 
| 1 medium stalk(s) | Celery | 
| 1 tsp minced | Ginger root | 
| 1 tbsp | Liquid aminos | 
| 1 dash | Black pepper |

| 3 cup | Vegetable stock/broth (or chicken broth) | 
| 1 cup | Coconut milk, sweetened | 
| 1 bunch | Spinach | 
1. Place all ingredients except for coconut milk and spinach in a pot, cover and simmer until broccoli and cauliflower are just tender, 5-10 minutes.
2. Add in coconut milk and spinach, stir. Blend with an immersion blender or dump everything into a blender and blend to desired consistency.
Spinach, Broccoli and Cauliflower
