1 cup Steel cut oats, dry
1 cup Cottage cheese (1% M.F.)
1/4 cup Buttermilk, 2% M.F. (use almond or cashew milk for a vegetarian/ vegan option)
1 tsp Vanilla extract, pure
2 medium Egg
1/2 cup All-purpose white flour
1 tsp Baking powder
1 tbsp Butter, unsalted (or cooking oil)


Add all ingredients into a blender and mix well.

Melt butter or oil in a large skillet over medium heat.

Turn heat down to medium-low and pour pancake batter into circles in pan.

Cook until pancakes start to bubble up and are browned on the other side.

Flip and cook for 1-2 more minutes.
