Ingredients


4 cup Cauliflower crumbles/rice
2 tbsp Extra virgin olive oil
1/2 tbsp Adobo sauce (powder)
1/2 tbsp Sazon seasoning
86 gm Tomato sauce, canned
1 tbsp Water (1-2)
4 serving(s) Authentic Puerto Rican Sofrito (1/4-1/3 cup)

Authentic Puerto Rican Sofrito

1 1/2 tbsp Olives ((pitted (optional)))
2/3 tsp Capers, canned ((optional))
2/3 medium White onion (large; (peeled, rough chopped))
2/3 bulb Garlic ((about 25 cloves); (peeled, rough chopped))
91 gm aji dulce peppers ((stems and seeds removed))
46 gm Pepper Paste, sweet (paprikakrem) ((stems and seeds removed; rough chopped))
1 1/4 bunch cilantro leaves (1/2 pound) culantro; (ends removed; rough chopped))
2/3 bunch Cilantro (coriander) ((about 1/3 pound; (leaves only (triple if you're not able to find culantro)))

on a Skillet stir fry the oil with any veggies you want to use or bean then add the cauliflower. add your seasoning and the rest of the ingredient until well combined. 

Cook until the cauli rice is well combined with seasoning and fluffy but not too sticky or moist.  shut off heat and remove from heat and enjoy.

Instructions for "Authentic Puerto Rican Sofrito"

  1. In a food processor (or blender) add the olives, capers, onion, and garlic cloves.Pulse the ingredients together 10 times, or until coarsely chopped. Scrape down the bowl of the food processor with a rubber spatula.
  2. Add the peppers to the bowl and pulse 8-9 times. Scrape down the bowl once more.
  3. Pour out half of the pepper and onion mixture into a clean bowl. Add the culantro and cilantro leaves to the food processor and pulse until the leaves are broken down- this can be done in stages if necessary.
  4. Return the pepper and onion that you reserved back to the food processor and pulse until the sofrito is semi-smooth (the consistency of chunky applesauce).
  5. Transfer the sofrito into mason jars or into ice cube trays to freeze* for later use.
