1/2 cup Rolled oats- Gluten Free
2 tsp Chia seeds
1/2 tsp Pumpkin pie spice
3/4 cup Coconut milk, sweetened
2 tbsp Pumpkin purée, canned
1/2 tsp Vanilla extract, pure
1 tbsp Maple syrup, pure
1 tbsp Walnuts


In a pint sized jar or container with lid, combine oats, chia and spice. Add 1/2 cup coconut milk, pumpkin puree and maple syrup and stir REALLY well. Add lid and place in fridge overnight.

When ready to eat top with walnuts and 1/4 cup milk.
