3 1/4 cup Vegetable stock/broth
1 medium Yellow onion
2 clove(s) Garlic
600 gm Pumpkin
1 medium stalk(s) Celery
1/2 cup Quinoa, uncooked
1 pinch Salt and pepper

Instructions


I a large pot add together the veggies and the quinoa, then the stock.

Simmer for 60 minutes or in a Soup and Co program on number one and extended the time to 35 minutes. The Soup and Co will keep soups warm for 40 minutes after the program has finished.

Optional to blend for a minute to make it smoother.
