|1 1/2 date pitted||Medjool date|
|1 tbsp||Chia seeds|
|1 cup||Rolled oats, dry|
|1 pinch||Sea Salt|
|1 cup||Peanut butter, smooth|
|1/4 cup||Pumpkin seeds (pepitas)|
|1/4 cup||Coconut, shredded, unsweetened|
1. Add dates, chia seeds, oats and sea salt into a food processor and pulse until crumbly.
2. Add mixture into an ice-cube tray 3/4 of the way full and press down with a spoon.
3. Next add a layer of peanut butter and top with a sprinkle of pumpkin seeds, unsweetened shredded coconut and a pinch of sea salt
4. Place in the freezer to set for a minimum of 5 hours or ideally overnight.
Keep stored in the freezer.
