1 cup pitted Dates (wet ingredients)
1 tbsp Lemon juice (wet ingredients)
1 1/2 cup Pumpkin purée, canned (wet ingredients)
1/2 cup Maple syrup, pure (wet ingredients)
1/2 tsp Vanilla extract, pure (wet ingredients)
1/4 cup Almond butter (wet ingredients)
2/3 cup slices Apple (peeled & grated, or applesauce, wet ingredients)
1/2 cup Teff flour (dry ingredients)
1/2 cup Chickpea flour (dry ingredients)
1/2 cup Almond flour/meal, Bob's Red Mill (dry ingredients)
1/4 cup Potato starch (dry ingredients)
1 dash Sea salt, fine (dry ingredients)
1 tbsp Baking powder (dry ingredients)
1 tsp Baking soda (dry ingredients)
1 tsp Cinnamon (dry ingredients)
1 dash Ground cloves (dry ingredients)
1 dash Nutmeg, ground (dry ingredients)
1 dash Allspice, ground (dry ingredients)


  1. Preheat oven to 350°F and prepare mini-muffin tins with oil or paper muffin cups.
  2. Place dates in food processor and mince. Add remaining wet ingredients and process to combine.
  3. Place all dry ingredients in separate bowl, and whisk to combine.
  4. Pour wet ingredients into dry and mix briefly to combine. Immediately scoop batter by the tablespoonful into muffin tins. Distribute batter evenly. Bake 20 minutes or until toothpick inserted in center comes out clean. Remove from oven and set on rack to cool completely before removing from tins.


Muffins freeze well in an airtight container.
