|681 gm||Parsnip (peeled, chopped)|
|2 tbsp||Butter, grass fed, unsalted (melted - or ghee)|
|1 dash||Sea salt|
1. Preheat oven to 400oF (205oC).
2. Place the parsnips in a bowl and coat evenly with the cooking fat and salt.
3. Place in a baking dish and cook in the oven for 45 minutes or until tender.
4. Puree in a high-powered blender until desired consistency is reached, adding more butter if desired.
Serve and enjoy!
Option to substitute olive oil in place of butter.
