Ingredients


2 cup Zucchini (shredded)
2 cup Carrots (shredded)
2 clove(s) Garlic (minced)
2/3 cup All-purpose white flour
2 large Egg (lightly beaten)
1/3 cup Green onion (sliced; green and white parts)
1/4 tsp Kosher salt
1 dash Black pepper
2 tbsp Extra virgin olive oil (for frying)
12 tbsp Greek yogurt, plain, fat-free (for serving)

Instructions


  1. Place the shredded zucchini in a colander and sprinkle it lightly with salt. Let the zucchini sit for 10 minutes then using your hands, squeeze out as much liquid as possible.
  2. Transfer the zucchini to a large bowl then add the carrots, garlic, flour, eggs, green onion, salt, and. Stir the mixture until it is combined.
  3. Line a plate with paper towels. Place a large non-stick fry pan over medium-high heat and add the olive oil. 
  4. Once the oil is shimmering, scoop approximately 1 heaping tablespoon of the mixture into the pan. Repeat until there are 3 'mounds' of the mixture in the pan. Flatten the mounds slightly and space them at least 1 inch apart.
  5. Cook the fritters for 2 to 3 minutes, then flip and continue cooking for 1 to 2 minutes until they’re golden brown and crispy. 
  6. Transfer the fritters to the paper towel-lined plate, season with a pinch of salt, and repeat the cooking process with the remaining mixture.
  7. Serve the fritters immediately topped with sour cream or yogurt.
