Preheat oven to 350 degrees C. Cut the fish into strips and place the strips in a medium size dish. Whisk together the oil, lime juice, ancho, jalapeno, and cilantro and pour over the fish. Let marinate for 15 to 20 minutes.
Wrap the tortillas in foil. Put the fish strips on a parchment-lined baking sheet. Put the fish and tortillas in the preheated oven for 8 to 10 minutes. The fish is ready when you can easily flake the fish with a fork.
Divide the fish among the tortillas and garnish with any or all of the garnishes (cabbage, onions, sour cream, hot sauce, cilantro and salsa).
