1/2 cup | Quinoa, cooked (or rice) |
1/4 cup | Kale (or spinach or arugula, julienned) |
1. Fry an egg in butter or coconut oil.
2. Add mushrooms, onion, peppers.
3. Heat up leftover rice or quinoa and then place kale on top .
4. Top with healthy fried egg and slice some avocado, or drizzle with extra virgin olive oil.
