1 medium egg Egg
1 tbsp Butter, unsalted (or coconut oil)
2 mushroom(s) Cremini (Italian) mushroom
2 tbsp diced White onion
1/4 cup slices Red bell pepper
1/2 cup Quinoa, cooked (or rice)
1/4 cup Kale (or spinach or arugula, julienned)

Instructions


1. Fry an egg in butter or coconut oil.

2. Add mushrooms, onion, peppers.

3. Heat up leftover rice or quinoa and then place kale on top .

4. Top with healthy fried egg and slice some avocado, or drizzle with extra virgin olive oil.
