Quick & Healthy Southwest Bean Salad Recipe

1 can (15oz) Black beans, canned (drained and rinsed)
1 cup Sweet yellow corn (Organic frozen; defrosted)
1 1/2 medium Beefsteak tomato (chopped)
2 tbsp chopped Yellow onion (diced)
1/2 tsp Chili powder
1/2 whole lime(s) Lime juice (fresh)
1/2 whole lemon(s) Lemon juice
1 avocado(s) Avocado (diced)
6 cup Arugula
1 dash Salt and pepper (to taste)


  1. Combine beans, corn, tomatoes, onion, chili powder, lemon and lime juice in a large bowl. Mix well.
  2. Place over a bed of arugula.
  3. Top with avocado, salt and pepper. Dig in!
