Kale and Mango Salad

Ingredients


1 1/2 cup Kale (chopped)
1/2 cup Mango (chopped)
1 tsp Lemon juice (to taste)
1 tsp Extra virgin olive oil (can be replaced with flaxseed oil)
1/4 tsp Sea salt, fine (to taste plus pinch to massage the kale)
1 dash Black pepper (optional)
2 tbsp Pumpkin seeds (pepitas) (optional)
1 tbsp hulled Sunflower seeds
1 tsp Honey (optional)

Instructions


  1. Massage the kale with olive oil and a pinch of salt till kale is softer
  2. Add the mango, whisk lemon juice, olive oil, salt, pepper and honey.
  3. Toss gently until everything is combined. Taste and adjust lemon juice, oil, or salt as needed.
  4. Toss in the seeds and enjoy

Notes:

Variations:

  • Add avocado or other vegetables like cucumber, shredded cabbage, julienned Kholrabi
