Ingredients

(chopped)

1/2 cup

Mango
(chopped)

1 tsp

Lemon juice
(to taste)

Extra virgin olive oil
(can be replaced with flaxseed oil)

1/4 tsp

Sea salt, fine
(to taste plus pinch to massage the kale)

Black pepper
(optional)

Pumpkin seeds (pepitas)

Instructions
- Massage the kale with olive oil and a pinch of salt till kale is softer
- Add the mango, whisk lemon juice, olive oil, salt, pepper and honey.
- Toss gently until everything is combined. Taste and adjust lemon juice, oil, or salt as needed.
- Toss in the seeds and enjoy
