Quick Quinoa Bean Salad

Ingredients


2 cup Black beans, canned (drained, rinsed)
2 cup Quinoa, cooked (as per package instructions)
2 tsp Extra virgin olive oil (as needed)
1 cup Cherry Tomatoes (halved)
2 cup Kale (chopped)
1 medium pepper(s) Red bell pepper (chopped)
1/2 cup Sweet corn, canned, drained (rinsed)

Instructions


1. Heat 1 tsp olive oil in a medium pan and sauté tomatoes, red pepper, corn and kale for a few minutes.

 

2. Add in quinoa and beans and stir to combine.


3. Pour into a serving bowl and add 1 tsp of olive oil if needed.

Serve and Enjoy!

are an excellent source of plant-based protein and are very high in fiber which is excellent for digestion
