|2 cup||Black beans, canned (drained, rinsed)|
|2 cup||Quinoa, cooked (as per package instructions)|
|2 tsp||Extra virgin olive oil (as needed)|
|1 cup||Cherry Tomatoes (halved)|
|2 cup||Kale (chopped)|
|1 medium pepper(s)||Red bell pepper (chopped)|
|1/2 cup||Sweet corn, canned, drained (rinsed)|
1. Heat 1 tsp olive oil in a medium pan and sauté tomatoes, red pepper, corn and kale for a few minutes.
2. Add in quinoa and beans and stir to combine.
3. Pour into a serving bowl and add 1 tsp of olive oil if needed.
