Quick Quinoa Bean Salad

2 tsp Extra virgin olive oil (as needed)
1 cup Cherry Tomatoes (halved)
1 medium pepper(s) Red bell pepper (chopped)
1/2 cup Sweet corn, canned, drained (rinsed)
2 cup Kale (chopped)
2 cup Quinoa, cooked (as per package instructions)
2 cup Black beans, canned (drained, rinsed)


  1. Heat olive oil in a medium pan and sauté tomatoes, red pepper, corn and kale for a few minutes.
  2. Add in quinoa and beans and stir to combine.
  3. Pour into a serving bowl. Serve and Enjoy!
