2 cup Black beans, canned (drained, rinsed)
1 cup Cherry Tomatoes (halved)
2 tsp Extra virgin olive oil (as needed)
2 cup Kale (chopped)
2 cup Quinoa, cooked
1 medium pepper(s) Red bell pepper (chopped)
1/2 cup Sweet corn, canned, drained (rinsed)


Heat 1 tsp olive oil in a medium pan and sauté tomatoes, red pepper, corn and kale for a few minutes. Add in quinoa and beans and stir to combine.

Pour into a serving bowl and add 1 tsp of olive oil if needed.

Serve and enjoy!
