1 tsp Extra virgin olive oil
454 gm Ground turkey, lean
medium Yellow onion (chopped)
1 can(s) (15 oz) Red kidney beans, canned, drained (rinsed)
1 tsp Chili powder
1/2 tsp Garlic powder
1 tsp Black pepper
1 can (28oz) Tomatoes, canned, stewed
1 cup Frozen yellow corn kernels (organic)
1/4 cup Green onion, scallion, ramp (chopped, for garnish)
1/2 avocado(s) Avocado (for garnish)
1/4 cup shredded Cheddar cheese, reduced fat (18%) (for garnish)


Heat oil in a large non-stick pan over medium heat. Add ground turkey and sauté for 5 minutes or until lightly browned. Stir often.

Add onions, kidney beans, chilli powder, garlic powder, pepper, stewed tomatoes and corn. Simmer for approximately 20 minutes.

Place in a bowl and serve.
