Quinoa Energy Bowl

Ingredients


1/4 cup Quinoa, cooked
1/4 cup Sweet potato (roasted)
1/4 cup Chickpeas, canned, drained
1/2 cup cubes Avocado
1 1/3 cup slices Apple
2 tbsp Pumpkin seeds (pepitas)
2 tbsp Red onion
1/2 cup Mixed Greens (what's in season, spinach)
1 tsp Lemon juice
2 tsp Flaxseed oil
1 pinch Sea Salt
1 dash Black pepper

Instructions


Cook Quinoa to package directions and cool in the fridge. Roast Sweet Potato in the oven at 350F for 30 minutes. Combine ingredients in a bowl, and top with lemon juice, flaxseed oil, and salt and pepper. Enjoy!
