Cooking the quinoa:
In a saucepan, combine the quinoa and water. Bring it to a boil, uncovered. Once the water starts boiling, cover the saucepan and let it simmer for 15 minutes. Uncover and set it aside
Heat 2 tablespoons of oil in a skillet. Add carrots and red onions. Cook the ingredients for about 6-7 minutes, or until soft. Add salt and pepper. Add garlic, ginger, and parsley. Mix the ingredients, making sure that the ingredients are evenly distributed. Bring the ingredients to the side, making an empty circle at the middle of the pan. Crack 2 eggs. After 1 minute, beat the eggs together using a wooden spatula. Once eggs are cooked, combine with the rest of the ingredients.
Add the cooked quinoa. At this point, bring the heat to low-medium. Mix the quinoa and the ingredients for about 3-4 minutes. Stir in soy sauce, sesame oil, and sriracha. If you do not like it spicy, exclude the sriracha. Mix for 2-3 more minutes.
