Ingredients


1 cup Quinoa, uncooked
1/2 cup Frozen green peas (can use fresh)
2 green onion (stem) Green onion, scallion, ramp (chopped)
1/2 cup Cashew nuts, raw (chopped)
1/4 cup Pumpkin seeds
1/4 cup Parsley, fresh
1/4 cup Mint, fresh
1/4 cup Goat cheese, semi-soft
1/4 cup Grape seed oil (dressing)
3 tbsp White wine vinegar (dressing)
2 tbsp Soy sauce (dressing)
1 1/2 tsp Curry powder (dressing)
1 tsp Honey, raw (dressing)
1/2 tsp Celery salt, McCormick (dressing)

Instructions


Cook quinoa according to package directions and cool.

Once cool, combine salad ingredients and place in a bowl.

Combine dressing ingredients in a separate bowl and then pour over salad.
