1 cup Quinoa, uncooked
1/2 cup Frozen green peas (defrosted)
2 green onion (stem) Green onion, scallion, ramp (chopped)
1/2 cup Cashew nuts, raw (toasted)
1/4 cup Pumpkin seeds
1/4 cup Parsley, fresh (chopped)
1/4 cup Mint, fresh
1/4 cup Goat cheese, soft (optional)
1/3 cup Olive oil
3 tbsp White wine vinegar
2 tbsp Soy sauce
1 1/2 tsp Curry powder
1 tsp Honey
1/2 tsp Celery salt, McCormick


Cook quinoa according to package instructions and let cool.

In a bowl, combine cooled quinoa, green peas, onions, cashews, pumpkin seeds, parsley, mint and goat cheese,

To make dressing, whisk together oil, vinegar, soy sauce, curry powder, honey and celery salt. Pour over salad and then toss together.
