This colourful combination of bitter radicchio, tender baby spinach and crunchy walnuts makes an intriguing contrast of textures and flavours.


1/2 head Radicchio
4 cup Baby spinach
1/2 cup Walnuts (toasted)
2 tbsp Canola oil (for dressing)
2 tbsp Vegetable oil (for dressing)
2 tbsp Walnut oil (for dressing)
1 tbsp Sherry vinegar (for dressing)
1/2 tsp Dijon mustard (for dressing)
1 pinch Salt and pepper (for dressing)


1. Tear radicchio into bite-size pieces into large bowl; add spinach.

2. Break walnuts into pieces into bowl.

3. Add dressing and toss to coat. Enjoy!
