RAINBOW RICE N' TOFU BOWL

Ingredients


1 medium pepper(s) Red bell pepper
2 medium Carrots
1 cup Cherry Tomatoes (yellow)
6 green onion (stem) Green onion
1 head Broccoli (Steamed)
1/2 small Red onion
1 package (1lb) Tofu, regular, extra firm (tossed with Spicy)
4 serving(s) BASIC BROWN RICE
1 cup SPICY PEANUT SAUCE

BASIC BROWN RICE

2 cup Brown rice, medium-grain, dry
4 cup Water
1 pinch Sea Salt (iodized salt)

SPICY PEANUT SAUCE

1 cup Peanut butter, natural
2 fruit Lime (small)
1/4 cup Soy sauce
2 tbsp Apple cider vinegar
2 tbsp Tomato ketchup
2 tbsp Sriracha
3 clove(s) Garlic (diced small)
5 green onion (stem) Green onion (diced small)
1 tbsp Garlic powder
1 tbsp Ginger, ground
1 cup Water

Instructions


1. Prepare Basic Brown Rice.

2. Drain tofu and slice into cubes. Toss with 1 cup of Spicy Peanut Sauce and bake at 400℉ on a parchment-paper lined baking sheet, or in a shallow glass baking dish, until tofu is slightly crisp on the edge (abut 30 min).

3. Prepare Steamed Broccoli

4. Shred carrots, chop bell pepper and red onion into small pieces, cut cherry tomatoes in half, and cut green onions into small pieces.

5. Use a one-cup size cup to scoop rice into a mound in the center of the bowl.

6. Arrange tofu, broccoli, bell pepper, carrots, tomatoes, and onions around rice.

7. Garnish with more diced green onions and/or fresh ground black pepper.

Instructions for "BASIC BROWN RICE"

1. Rinse rice with cold water until water runs clear. Use a fi ne mesh strainer or you can do this in your cooking pot being careful not to pour out your rice.

2. Place rice into a pot with a tight-fi tting lid and bring water to a boil over high heat.

3. As water begins to boil stir rice, cover, and reduce heat to low,

4. Allow rice to steam to perfection which usually takes about 45–50 minutes. Stir rice to check that it is almost completely soft before turning off heat.

5. Remove rice from heat and keep lid on for another 10 minutes to allow it to steam the rest of the way to perfection.

6. Remove lid, fl uff rice with large spoon or fork, and serve

Instructions for "SPICY PEANUT SAUCE"

1. Combine ingredients in a large bowl or jar with lid.

2. Shake jar or whisk ingredients in a bowl until well combined.

3. Store leftovers in sealed jar in the refrigerator.
