Blueberry Lemon Chia Seed Pudding

Ingredients


1 cup Almond milk, unsweetened
1 tsp Vanilla bean powder (or 2 tsp pure vanilla extract)
1/2 tsp Cinnamon
1 cup Frozen blueberries (or frozen)
1 tbsp Date sugar (or sweetener of choice, optional)
6 tbsp Chia seeds
1/2 tsp Lemon peel (zest) (organic lemon)
1 tsp Lemon juice

Instructions


  1. Remove jar from fridge. Shake jar before opening and transfer pudding to bowl. Let it warm to room temperature.
  2. Meanwhile, put 1 - 2 tbsp of frozen blueberries in a small pot on the stove and bring to a simmer,
  3. Top pudding with 1 tsp lemon juice and warmed blueberries.

 

Optional: Feel free to garnish with whatever else you like e.g. slivered almonds, walnuts, pumpkin seeds, granola, sliced banana, etc.
