Raw Chocolate Chip Cookie Dough Macaroons
Cashew nuts, raw
Dark chocolate chips
(pitted and soaked in hot water)
Dried goji berries
Rolled oats, dry
(use gluten free rolled oats for a gluten free recipe)
Vanilla extract, pure
Set aside the cashews, coconut, rolled oats, and salt and place in a food processor. Blend until cashews have broken down and a fine meal forms.
Take the pitted, soaked dates, 3 tablespoons of water, and the vanilla extract and place in blender with other ingredients. Pulse again until mixture becomes more of a dough-like consistency.
Take dough out of food processor and place in a large mixing bowl. With your hands, gently fold in the chocolate chips and goji berries until they are mixed throughout the dough.
Using spoons form the dough into 12 smaller balls and lay out on a plate.
On a piece of parchment paper or another plate, roll the cookie dough balls into more coconut flakes as a topping.
