Ingredients


1 bunch Black kale (aka dinosaur kale)
1/2 medium Red onion (thinly sliced)
1 bulb(s) Fennel (thinly sliced)
2 medium Apple (thinly sliced)
2 whole lemon(s) Lemon juice
1 tbsp Olive Oil, Extra Virgin
1/4 tsp Kosher salt

Instructions


  1. Using a mandolin, slicing blade on the food processor or sharp knife, slice the fennel, red onion and apple. 
  2. Slice the kale finely with a sharp knife.
  3. Toss in a bowl, squeeze lemon juice and salt. 
  4. Let sit for a few hours or overnight until it wilts
  5. Dress with olive oil before serving
